Pasta with Heirloom Tomatoes, Garlic and Basil
heirloom cherry tomatoes, halved
2 cloves garlic
olive oil
1 T. chilled unsalted butter, cut into bits
kosher salt
cracked black pepper
fresh basil
pasta
Heat olive oil over medium heat, add garlic and saute for about 30 seconds to 1 minute or until garlic takes on some color. Add 1/3 of the butter and cook for another 1-2 minutes, stirring frequently.
Add tomatoes and a few more butter cubes, cook for 4-5 minutes over medium-high or until tomatoes wilt. Adjust seasoning.
Whisk in remaining butter, cook for 1 more minute. Adjust seasoning.
Combine with cooked pasta, add basil and toss. Serve immediately.
