Spinach Salad

The addition of one teaspoon freshly grated Parmigiano-Reggiano cheese to a basic vinaigrette (two tablespoons extra-virgin olive oil, the juice of half a lemon, a small pinch each of salt and pepper) transforms it to something sophisticated and elegant all at the same time.
