Originally, I had planned an appetizer for dinner earlier in the week called “bacon and eggs” — slow-cooked scrambled wild turkey eggs, with caviar and pancetta. Unfortunately, the remaining pancetta I had in the fridge happened to go bad so a reboot was in order, hence the salad pictured below.

I would love to see a turkey egg in the shell! And so sad the pancetta went bad.
