A note for my regular readers and followers: this post is tagged “vegan”, “vegetarian” and “gluten-free” because even though you see some pictures that contain animal protein, there are other dishes that fit those criteria such as for example, the asparagus with coconut, pistachio and Indian spices (vegan/gluten-free) and the spaghetti with spinach and ricotta (vegetarian). I myself am a “flexitarian”, that is, someone who is an omnivore but who consumes less meat than he used to.
