Roasted cauliflower “bruschetta”: roasted cauliflower (cauliflower, sea salt, black pepper, olive oil), seasoned with fish sauce, lime juice, cayenne pepper and cilantro, over fried Italian bread.
Smoked Bacon, White Peaches, Chard
The chard was briefly wilted in bacon drippings and dressed with a few drops of sherry vinegar.
Watermelon, Thyme, Olive Oil
This is a play on tomato bruschetta. In addition to the thyme and olive oil, the watermelon was seasoned with sea salt and black pepper.
